Maple
Nut Blueberry Muffins

Ingredients:
2
cups flour
2
tsp. baking powder
1
tbsp. MAPLE SUGAR
1/4
cup pure MAPLE SYRUP
1
stick butter, melted
1/4
cup milk
2
eggs, beaten
1
1/2 cup blueberries
1/4
cup chopped nuts
Directions:
-
In
a large bowl, mix together flour, baking powder and Maple sugar.
Set aside.

Spray
a one cup glass measuring cup with cooking spray.
Measure syrup into cup. Add
butter. Melt in microwave on
high for about 1 minute, watching carefully.
When the butter is mostly melted, remove form microwave and continue
stirring until totally melted. Add
the milk. Add the syrup/butter
mixture to the flour mixture and add the two beaten eggs.
Mix well.

Fold
in the blueberries and nuts.

Spray
muffin tin with baking spray. Fill
2/3 full.

Sprinkle
tops of muffins with some maple sugar before baking.

Bake
at 375 for 20-25 minutes, or until they test done.
Cool in pan for 10 min. before moving removing to cooling rack.
Makes
1 dozen muffins.
